I had a difficult time going through all 500+ photos and picking out just a few to post here. Sorry there are so many pictures of the same corn field (but not sorry enough to delete any of them). I took these pictures at my cousin Chanda's newly purchased home. I thought it was so charming. It came complete with apple trees, a pear tree, a cherry tree, a trellis covered in grapevines, and this big red barn that my cousin and her husband have decided to renovate before the house ;) (which I think is cool). The baby goats belong to my cousin Jeremy- he dropped them off for Chanda and her husband to babysit over the weekend.
I love summertime. When I think of summertime, I reminisce of Iowa, these two kids, fire works, crash derbies, lightening bugs, playing in the creek (pronounced "crick), lots of sweet corn, and wishing the summer would never ever end...
Curio Coffee

Yesterday we visited Curio Coffee in Cambridge. In a short 4 months they've built up a reputation for great coffee and addictive waffles- the only food item on their menu. Their space is small (maybe seating for 15?), but a really pleasant place to hang out. Every wall says, "take a picture of me!" And who am I to refuse a beautiful wall.
We weren't lucky enough to find a seat at the shop so we found some steps to loiter on nearby (only long enough to finish our treats). Excellent coffee, yummy waffles, cute decor. Check it out.

PB-Banana-Oatmeal-CC-Flaxseed Muffins

I'm really bad at following recipes, but I also can't cook without them. Today I found a banana oatmeal muffin recipe, but it called for 2 bananas and I only had 1. Then I found another oatmeal muffin recipe but it called for 5 cups of oats and I only had 2 so I worked with what I had and came up with this. (And they were realllly good- though a little crumbly).
Peanut Butter-Banana-Oatmeal-Chocolate Chip-Flaxseed Muffins (adapted from this F52 recipe)
Makes about 24 muffins
2 C. rolled oats
1 C. whole wheat flour
2/3 C. light brown sugar
1/3 C. flaxseed meal
2 tsp baking soda
Scant 1 tsp baking powder
Pinch of salt
1 egg, lightly beaten
1 C. whole milk + 1 Tbs white vinegar (or 1 C. buttermilk)
1/2 Tbs. vanilla extract
1/2 Tbs. vanilla extract
1/4 C. coconut oil, melted and cooled
1/4 C. peanut butter
1 ripe banana, mashed
1 C. milk chocolate chips
- Preheat oven to 350° & line 2 muffin pans with cupcake liners.
- Combine dry ingredients (rolled oats + next 6 ingredients)
- Add egg, milk mixture, vanilla, oil, peanut butter and banana. Stir until just combined.
- Fold in chocolate chips.
- Fill muffin cups about 3/4 full & place on the middle rack of oven. Bake until golden brown and a toothpick inserted comes out clean, about 10-15 min.
- Remove from oven and allow to cool about 5 minutes.
- Share & enjoy!

We LOVED New York & can't wait to go back! It was a whirlwind trip. Very little time- too many people and things to see.
We arrived Saturday evening and went to this posh little Italian restaurant with some of our friends (we fit right in with the rambunctious toddler)- such great pasta though...we had something with duck. That night was pretty rough. The toddler didn't sleep...i don't think. So the next morning we went out and about- grabbed a coffee & donut at Joe Coffee and admired the general splendor that is grand central station. Headed home and napped a few hours, went to a friend's surprise birthday party, met up with family at the original shake shack and called it a day.
Toddler slept much better. So did we. The next morning we went to brunch here and loved it. I'm only eating my oatmeal with blueberries, chocolate, and coconut from now on. Afterwards, we walked through central park (we thought we were walking straight through central park, but it was more like a meandering walk..and I took a picture of those benches you always see in movies...) to the museum of natural history where we waited in line FOR-EV-ER (well, hubby did and I tried to entertain T, but the two dinosaurs in the lobby eventually weren't enough to hold his attention. huh). And then we saw dinosaurs and elephants, hopped on the subway, grabbed lunch and drove home. Whew.
So, now we know we can do New York with a toddler. Woot, woot!
